Delicious Pumpkin Muffins!

2 Cup Flour
2 Tsp. Baking Powder
1/2 Tsp. Baking Soda
1/4 Tsp. Salt
1/2 Cup Brown Sugar
3/4 Tsp. Cinnamon
1/4 Tsp. Nutmeg
1 Cup Cooked, Mashed Pumpkin (half of a one can)
1/2 Cup Milk
1/4 Cup vegetable oil
1 Egg
3/4 Tsp. Vanilla
1/2 Cup Raisins (optional)

Directions: Preheat Oven to 400
Grease Muffin Pan.....

Combine the first seven ingredients in a large bowl....
In a Second bowl, Combine pumpkin,milk,oil,egg and vanilla....Stir well.
ADD Liguild ingredients to dry ingredients stirring just til dry ingredientsare moist.....
Fold in Raisins......
Spoon batter into greased muffin pans, then filling each 2/3 full.....
Bake for 20 minutes or until lightly browned muffins......
Remove muffins from Pan til immediately cool off!
Serve to eat for breakfast or Snack!
